Introduction
In order to prolong the shelf life of food, pre-cooling has become a key step in food preservation. Common cooling methods include vacuum precooling, differential pressure cooling, ventilation cooling and cold storage cooling. The cooling speed of vacuum cooling is fast, and there is no bacterial reproduction. The cooling speed of the traditional air cooling is slow, and the bacteria multiply. Vacuum pre-cooling machine adopts the leading and exquisite vacuum pre-cooling technology. By extracting the air and water vapor in the vacuum tank to reduce the air pressure, the water inside and outside the cooked food evaporates and absorbs heat, and takes away the heat of itself and the environment to achieve the cooling effect.
Why cooked food need to be pre-chilled/pre-cooled
The cooked food at 90°C can be cooled to normal temperature 25°C in about 25 minutes, and cooled to below 10°C in 30 minutes. Its outstanding advantage is that it can quickly pass through the high-speed breeding area of bacteria (30°C-60°C), control the increase of bacteria, improve the hygiene and safety of food, and extend the quality assurance period.
